Easy Homemade Peach Cobbler

You know what puts me in a summer mood? Peaches. As soon as they’re in season, this gluten free peach cobbler recipe isn’t far behind!

One bite of this recipe though, and you’ll see why I make this easy classic cobbler all year round. Fresh peaches in the summer, frozen peaches in the winter – you know the drill. It’s just a simple and delicious, comforting gluten free dessert no matter what the season.

All you need is some ripe, juicy peaches and a few minutes to pull together the dough topping before your oven takes care of the rest.

What Is the Difference Between Peach Cobbler and Peach Crumble?

Cobbler or crumble? What’s the difference? They’re very similar fruit desserts, but not the same. This classic peach cobbler is made with fruit topped with homemade pie dough, minus a bottom crust. A peach crisp or crumble, on the other hand, is baked with a streusel topping made with brown sugar (and sometimes rolled oats).

Ingredients You’ll Need

Many of the ingredients for this cobbler recipe double up between the filling and the topping! All in all, you mostly need common pantry items – and peaches, of course. Here’s an overview of what you’ll need, and the full amounts can be found in the recipe card.

For the Peach Filling

  • Peaches: You can make this cobbler using fresh or frozen yellow peaches (more on this below), evenly sliced.
  • Sugar: Regular white sugar is best.
  • Gluten Free Flour: I use the gluten free 1-to-1 flour blend from King Arthur for this recipe. You’ll need it for the filling as well as the dough topping.
  • Butter: I recommend using unsalted butter, brought to room temperature.

For the Topping

  • Gluten Free Flour
  • Baking Powder: Helps the dough to rise.
  • Salt
  • Sugar: You can use the same sugar that was used to make the filling.
  • Shortening: Vegetable shortening like Crisco, brought to room temperature.
  • Milk
  • Egg

Can I Use Fresh Peaches Instead of Frozen Ones?

Yes! You’ll need about 7-8 medium-sized fresh peaches to fill 4 cups. Peeled or unpeeled –that’s up to you.

How to Make Gluten-Free Peach Cobbler

You can have this easy gluten free cobbler fresh from the oven in about an hour. Here’s how to make it:

Make the Filling: While the oven is preheating, add your peach slices into a baking dish. Mix the sugar with a couple of tablespoons of flour, then sprinkle this mixture over the peaches. Dot the filling with butter.

Make the Topping: Whisk together the flour and dry ingredients. Next, stir in the shortening, milk, and eggs until a dough-like batter forms. Use a spoon or your hands to drop the dough liberally over the peach filling.

Bake: Bake the cobbler in the center of your oven. The cobbler is done when the peaches are juicy and bubbling, and the topping has a slight crunch. You’ll want to let it cool for a while on the counter before you serve it, to give the filling a chance to set up a bit. Serve your cobbler with a scoop of ice cream and enjoy!

It’s not hard to achieve cobbler perfection, but here are some tips to get perfect results every time:

  • Use the Right Flour: I don’t recommend using gluten free all purpose flour for this cobbler, as the taste is better suited for savory baking, like breads.
  • Use Room Temperature Ingredients: Be sure that ingredients like butter and shortening are at room temperature before you start, to make them easier to mix.
  • Can I Use Other Fruits?: This recipe is great to make with other fruits, whatever is in season! Try it with blueberries, strawberries, or apples.

Serving Suggestions

This juicy peach cobbler is amazing as it is, or you can never go wrong with a scoop of ice cream and a sprinkle of cinnamon! Or try these other easy topping ideas:

How to Store and Reheat Extras

Homemade peach cobbler will keep fresh when stored airtight at room temperature for 2 days, or up to 4 days in the fridge. I love to serve my cobbler warm, so I reheat extra servings in the microwave in bursts until they’re warmed through.

You can also reheat cobbler in the oven at 350ºF for about 10-20 minutes, depending on whether it was chilled beforehand.

Can I Freeze Fruit Cobbler?

This cobbler holds up well when frozen. Make sure that the cobbler is completely cool, then wrap it tightly with plastic wrap (plus a layer of foil to guard against freezer burn), or transfer it to a freezer safe container to freeze. Store your cobbler frozen for up to 6-8 months.

Thaw the cobbler overnight in the fridge before reheating. When reheating peach cobbler that’s been frozen and thawed, I prefer the oven method, 20 minutes at 350ºF.

    Gluten Free Peach Cobbler

    This sweet and classic Gluten Free Peach Cobbler is an easy gluten free dessert, made with fresh (or frozen!) juicy peaches and buttery gluten-free dough.

    Ingredients

    Peach Filling:

    • 4 cups peaches fresh or frozen, sliced (7-8 medium peaches)
    • 3/4 cup sugar
    • 2 tbsp gluten free 1-to-1 flour (I used King Arthur)
    • 2 tbsp unsalted butter at room temperature

    Topping:

    • 1 cup gluten free 1-to-1 flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 2 tbsp sugar
    • 1/3 cup vegetable shortening at room temperature
    • 1/4 cup milk
    • 1 egg beaten

    Instructions

    • Preheat oven to 350°F.

    • Add sliced peaches, fresh or frozen, directly to a 9in X 13in baking dish.

    • In a medium bowl, mix together 3/4 cup sugar and 2 tablespoons gluten free flour and sprinkle over peaches. Dot with 2 tablespoons of butter.

    • In a mixing bowl whisk together 1 cup of gluten free flour, baking powder, salt and 2 tablespoons of sugar until combined. Add shortening, milk and eggs and blend until a cookie dough batter forms.

    • Drop topping by the tablespoon, or use your fingers, over the peaches. There is no need to be too careful here.

    • Bake on the center rack of your oven for 40 minutes. Your peaches should be juicy and bubbly around the edges and your topping should be slightly crunchy.

    • Remove from oven and allow to cool for 10-20 minutes before serving.

    • Serve the cobbler on its own or top with ice cream and cinnamon.

    Notes

    • If using fresh peaches, it is up to you if you want to peel them.
    • Make sure your vegetable shortening is at room temperature for easy mixing
    • You can use this cobbler recipe for other fruits as well, try using fresh blueberries, strawberries or apples. Whatever is in season.
    • I would not recommend using Gluten Free All Purpose flour for this recipe. The flavor of All purpose flour is more suited for savory dishes or breads.
